Silver Dollar Pancakes With Creamy Fruit Topping
Turkey Sausage Patties
Mimosa Spritzers

Pancakes
Ingredients
- 3 eggs or egg substitute
- 1 cup milk
- 1 cup all-purpose flour
Directions
- Beat eggs and milk together in large bowl. Beat in flour until batter is smooth. Lightly coat an 8 inch skillet or crepe pan on medium-high heat with cooking spray. Make one pancake at a time by dropping a large spoonful of batter onto pan and tilting to cover the whole surface of the pan evenly. Cook until golden, turning once, about 2 minutes per pancake.
Servings Per Recipe: 12 silver dollar sized pancakes, usually serves 6

Topping
Ingredients
- 1 fresh pineapple cut into small chunks
- 1 (5 ounce) package sugar-free instant vanilla pudding mix
- 1 (15 ounce) can mandarin oranges, drained
- 3/4 cup red raisins or seedless red grapes
- 2 kiwi cut into small chunks
Directions
- Drain all of the juice from the pineapple into a large bowl. Set the pineapple chunks aside.
- Add the vanilla pudding mix to the pineapple juice, adding skim milk or water if necessary, and mix well until smooth. Stir in the pineapple chunks, mandarin oranges, and raisins (or grapes). Mix well. Refrigerate for at least 30 minutes.
- Fold in kiwi last.

Turkey Sausage Patties
Ingredients
- 2 pounds ground turkey
- 3/4 teaspoon ground ginger
- 3/4 teaspoons salt or salt substitute
- 1 teaspoon dried sage
- 1/4 teaspoon cayenne pepper
- 1 1/2 teaspoons ground black pepper
Directions
- In a large bowl, mix together the ground turkey, ginger, salt, sage, cayenne pepper, and black pepper until well blended.
- Heat a skillet over medium-high heat, and coat with nonstick cooking spray. Form the turkey sausage into patties, and fry until browned on both sides, and no longer pink in the center. This should take about 15 minutes.

One Package Crystal Light Orange-Pineapple Drink Mix (Or your favorite flavor)
Champagne
Whole Fresh Strawberries
Directions
In Champagne flute or glasses, pour Crystal Light Drink until about 3/4 full. Top off with champagne, add a whole strawberry.

What a nice idea! We always just grab finger foods for SuperBowl and this really sounds great. I love the spritzer idea and the fruit topping sounds delish. My daughter will get into decorating the table! : )

Geez Louise….you got me thinking here! I’m using the pancakes recipe….boy it’s a simple one thank you! And I’m using low cal syrup and low cal whipped topping with some roasted pecans. Then I’m serving the fruit topping on the side. The sausage patties? I’m making TRIPLE recipe for them because both my husband and his very hungry two sons will love them! It will be a blast making mimosas – I never do – so it will be really a special occasion.

I have made margaritas using Crystal Light Lemonade but never thought about mimosas! The turkey patties recipe is something I’ve been looking for. We love turkey burgers and I wanted to explore other recipes.

Been lurking here a few weeks so I thought I’d finally respond. About 4 years ago I had my daughter and thought the fatigue I went through afterward was just part of it. Then I started craving sweets and drinking water like a camel. One day I was out to dinner with my husband and when I got my dessert (chocolate molten cake) I took two sugar packs and poured it all over it, even though it had chocolate syrup on it and came with vanilla ice cream. I couldn’t get things sweet enough for me. My husband looked on (I think he was grossed out by it honestly) and finally said he wanted me to see my doctor. I did and was diagnosed with type II diabetes.
I really appreciate these kind of recipes. The cream fruit sounds awesome and I know the rest will be good too. I’m going to be making this tomorrow.

We just finished eating and putting everything away and I wanted to take a moment to say thank you. This was really delicious! I added my own touches to the pancakes by adding cinnamon & cloves to the batter. I used pure maple syrup over them and used the cream fruit on the side. The sausage patties are absolutely fantastic!
My husband and I both enjoyed the mimosas. I used the crystal light orange mix and it was really good. Hadn’t thought about using that but it worked well.
This was just enough food to give us a nice meal, and the only thing I have leftover is some of the cream fruit, but only enough for me to have it for breakfast tomorrow and that’s gone too. I like that. I’m not one to want a refrigerator full of leftovers!

I made triple recipe for the pancakes and doubled the sausage patties. In my pancake batter I added some mashed banana and topped them with light syrup and low fat RediWhip. Everything turned out delicious! At first my husband wanted to know where the bread was, but I told him we didn’t NEED bread because we had pancakes! He’s looking to drop 20 lbs too so he was actually happy when I told him everything was lower in calories & fat.
The mimosas were fantastic! I used low calorie orange drink mix and mashed some strawberries to put in each glass.
Thanks so much for this suggestion. It’s all easy to make, and I doubt I’d have thought about it especially on Game Day. Usually on my day’s off we go out and pick up donuts for breakfast. This was way healthier and I don’t feel guilty at all about having such a nice brunch. : )

I came in and saw this, and decided to make this brunch for Valentine’s Day. It was a real hit and me and my boyfriend really enjoyed it! I love the pancakes. They are so easy to make and you can add things like applesauce or pie filling to them and they still come out great.
